Hazelnut is one of the important nut tree species. It is a woody oil tree species and belongs to the Corylaceae Corylus genus. There are 16 species in the world, mainly distributed in Asia, Europe and North America. The fruit is shaped like a chestnut, ovoid, with a yellow-brown shell. The seeds are fragrant, sweet and oily, and are harvested in autumn. The main producing area is Turkey. In my country, hazelnuts are rarely cultivated and planted in large areas. However, in the vast areas of Northeast and North China, there are wild varieties that are collected by locals and sold as mountain products. The fatty acid composition of hazelnut oil is not only dominated by unsaturated fatty acids, the content of oleic acid is 77.28%, and the content of linoleic acid is 13.93%.
