Description

Calcium acetate is an effective growth inhibitor of many bacteria and molds. It is widely employed in bread and other bakery products to extend shelf-life and to prevent rope formation. Calcium acetate is a preservative that is very effective against rope bacteria with some efficacy against molds.

Calcium acetate occurs as a fine, white, bulky powder. It is freely soluble in water and

slightly soluble in alcohol.

Application:

1)      Buffer; stabilizer; pH regulator.

2)      Firming agent.

3)      Chelating agents and mildew suppressants.

4)      Flavoring agents and preservatives, nutrient supplement.
